What is Borievka?

Updated: Oct 18, 2022

Colloquially known as the “Revenge of the Forest”.

Borovička is a traditional Slovakian, Czech and Hungarian distilled spirit whose name is derived from the Slovak for juniper or borievka.

Colloquially known as the “Revenge of the Forest” it is thought to have been created to mask the poor-quality flavour of local potato vodka made in the 16th century.

Borovička has a protected geographical indication (PGI) that emphasises the relationship between the specific geographic region and the name of the product, where a particular quality, reputation or other characteristic is essentially attributable to its geographical origin.

This protection under international law covers its definition, description, presentation and labelling as a spirit. Borovička is made from either the steeping or vapour infusion of fermented ground juniper berries in a base spirit before being distilled as a gin having a white or golden colour.

The flavour profile is often described as a brandy having a strong piney juniper and herbal notes with a dry finish
